Product information of "BALIK Side Classic - Tavolata Cut"
The centrepiece of André Jaeger's tavolata is the whole side of salmon, already removed from the skin and easily divided into a back fillet and a belly fillet. The back fillet is served cold as usual. The belly fillet is gently warmed in the oven. The result is two wonderful dishes with completely different flavours, consistencies and textures.
This whole, slightly shortened side of salmon is mildly smoked, parried in one piece and removed from the skin. Due to its shorter length, it also fits wonderfully in the fridge.
André Jaeger is also proposing several side dishes to accompany the Tavlota, or you can create your own. (See the recipe here)
